Recipes: Fig and Almond Energy Balls

Good for a snack and replacing electrolytes

These amounts make 10-12 balls

  • 8 dried figs
  • 1 tsp vanilla extract
  • 10 cardamom pods
  • 4 tbsp ground almonds
  • 2 tbsp coconut flour
  • 2 tbsp pumpkin seeds
  • 2 tbsp dried banana chips, smashed
  • A pinch of sea salt
  • 4 dried apricots, chopped
  • 2 tsp cocoa powder (optional)

Chop the figs into small cubes and soak in enough boiled water to just cover them.

Add the vanilla extract and cardamom pods and leave for 5 minutes.

Drain off most of the excess water, leaving a couple of teaspoons of the liquid and remove the cardamom pods. It’s a good idea to count them in and count them back out so you know you’ve taken them all out!

Mash with a fork and add all the other ingredients and mix together. It should become quite a stiff consistency to then roll into balls. If it is still too loose, add a bit more coconut flour.

When rolling the balls, chop some extra pumpkin seeds and mix with a little coconut flour to roll them in. This will prevent them from becoming too sticky. Done!
