
Falafel Bites
These are quick and easy to put together as a snack or add to something like a salad and throw in some feta, olives, tomato and avocado for a quick lunch
400g (one can) cooked chickpeas
1 tsp chilli flakes
1 tsp cumin seeds
2 Garlic cloves, minced
½ cup roughly chopped coriander
1 tbsp gram flour (chickpea flour)
Half a lemon
2 tsp coconut oil
Drain the chickpeas and rinse well. Put them in a food processor with all the other ingredients apart from the lemon and coconut oil.
Blitz briefly until everything is combined.
Squeeze in the lemon and mix.
Heat the coconut oil in a pan and heat to a medium heat.
Take a teaspoon and make balls of the mix and then flatten slightly and add to the hot pan. Turn after a 3-4 minutes and cook until golden on both sides.
