NutriBullet Beetroot brownies
These can be made with a Nutribullet or any food processor.
3 eggs
400g cooked beetroot
40g cocoa powder
100g butter
200g dark chocolate
200g coconut sugar
100g plain flour or gluten free flour
Heat the oven to 180C, gas mark 4. Line a 30x20cm tin with greaseproof paper
Weigh out the butter and chocolate and place it in a bowl over hot water until melted.
Meanwhile, chop up the cooked beetroot.
Note: You can buy the already cooked beetroot (not in vinegar!) to save time or boil them in water in their skins, then peel.
Put the butter, chocolate and beetroot in a NutriBullet or any food processor and whizz until smooth.
Whisk up the eggs and sugar until thickened. Gently stir in the beetroot mix and then sieve in the flour and cocoa powder and fold it all together, trying not to lose too much of the air you whisked in.Pour into the lined tin and bake for 25 minutes
